- Heiner gave the ingredients, not the amounts; the quantities here are a starting point, not his measure. Adjust vinegar and sugar against each other until it tastes right.
- The horseradish he spoons in freely, so it leads rather than lurks. Jarred Meerrettich fades as the salad sits, so it takes more than seems sensible.
- Salting and draining is his step, not an addition; 10 to 15 minutes is enough.
- The dill is frozen chopped, not fresh, so it thaws into the cream without going limp.
- The brine comes out of a jar of würzig-scharfe Gurken, so it carries sugar, vinegar and mustard seed with it. Add it before the sugar and honey, then sweeten only if it still needs it.
- Essig-Essenz is vinegar concentrate at around 25% acid, several times the strength of table vinegar. A few drops, stirred in and tasted, never a pour.
